Amish Breakfast Casserole



 ~ preheat oven to 350* ~
Ingredients:
  • 1 lb. sliced bacon (diced up)
  • 1 medium sweet onion (diced)
  • 6 eggs (lightly beaten)
  • 4 c. frozen, shredded hash brown potatoes
  • 2 c. shredded cheddar cheese
  • 1 1/2 c. small curd cottage cheese
  • 1 1/4 c. shredded Swiss cheese
Directions:
In a large skillet, cook bacon and onions until the bacon is crisp. Drain off the grease. Put in a large bowl. Add the remaining ingredients. Stir together. Transfer to a greased 9x13 pan. Bake, uncovered at 350* for 35-40 minutes (or until eggs are set). Let stand 10 minutes before serving.

Makes 8-10 servings
